Together we FLIP THE FOOD PYRAMID UPSIDE DOWN by increasing the amount of healthier food from the bottom of the pyramid and replacing the less healthy food from the top of the pyramid.

The power of curiosity comes from its ability to help us learn and grow. We want to see powerful change, and we wanted to see if we, with the support of our Nordic innovation heritage, could find ways to accelerate the change we wanted to see. Our curiosity took us beyond our Nordic sphere, and from east to west we built Nokivi – a community of visionary experts, changemakers and chefs. This is where the food innovation heritage and experience come together to develop solutions with an international perspective.

CHALLENGES

1. The HEALTHY EATING challenge

Today’s eating habits and plates are designed in a way that is not sustainable. We eat mostly from the top of the food pyramid and down. This is not only negative for the planet, but also for our health. Lifestyle diseases such as overweight and type-2 diabetes are spreading in epidemic proportions leading to serious health complications. Ensuring healthy lives and promoting well-being at all ages is essential to sustainable development.

2.The NATURAL ECOSYSTEM challenge

There is a fundamental need to transform the global food system from animal based to plant based to meet the challenges facing global resources, climate threats, and our natural ecosystems. The change is ongoing with a growing market for both dairy and meat alternatives but not fast enough.

3.The AVAILABILITY OF PROFESSIONAL CHEFS challenge

The shortage of qualified chefs is a growing global challenge within food service.
At the same time there is a need to speed and ease of preparation and serving, ensuring a culinary end-result and building a strong repeat customer base.

NOKIVI VISION NO.1,
A TASTE AND TEXTURE EXPERIENCE

We know that taste, texture and the visual appeal are big barriers for accepting healthier and more sustainable foods. In search for the best possible combination of taste, texture and visual appeal we have successfully created a plant-based and delicious center of the plate component with jackfruit that keeps you alert and satisfied over a long time. It has a balanced nutritional profile made with only natural ingredients and no additives. Jackfruit grows on trees in the tropical rainforest, and we source ours from the best climate zone at a regenerative jackfruit plantation in Malaysia.

Our first vision has been developed in our gastronomic and culinary center- FASANGÅRDEN, in southern Sweden, in co-creation with Nokivi top chefs and Honorary Doctor in Gastronomy, Gert Klötzke.

It will come in various customized concepts and solutions. Now we want to take it to the next level and co-create together with our partners!

Curiosity started our movement. We want to see powerful change, and we wanted to see if we, with the support of our Nordic innovation heritage, could find ways to accelerate the change.

NOKIVI® has a strong heritage of innovation, co-founded by Siccona AB, the food and lifestyle division of Igelosa Life Science AB in Lund, with the purpose to save lives that led to innovations of medical devices in heart and lung transplantation. Siccona was founded to develop dietary options to maintain the health of critically ill patients before and after transplantation.

OUR INSPIRATION FOR A LONGER LIFE

For more than 20 years, Siccona and its scientific community have been involved in research on lifestyle related disease prevention, by the innovation of healthier foods and diets based on science and research on the Okinawa diet, one of the five globally recognized Blue Zones where people live longer due to their traditional lifestyle.

Together with chefs in Sweden, Siccona developed the Okinawan-based Nordic diet®, using familiar ingredients to create traditional Nordic dishes based on the principles of the Okinawan lifestyle. These principles include to eat more vegetables and fruits, while refraining from consuming excessive amounts of processed foods and red meat.

The learnings from 15 years of extensive research experience is that, even if you have all the right components, positive change won’t happen unless you make the change appetizing. With this key principle in mind, Nokivi is founded. By creating positive taste experiences we flip the food pyramid upside down.
